The only way I've found to go to an older version of an iOS app is to delete it from the device, move the copy on my Mac out of the Mobile Apps folder, restore a backed up copy of the old version to the Mobile Apps folder, and then check the box in iTunes to have it sync the app to the device again. It's a pain, and only works if you have a backup (which I generally do, because Time Machine).
