Four egg yolks
Apr. 21st, 2006 01:00 pmSo I'm going to have these four egg yolks[1], and I'm looking for ideas for what to do with them. It should be relatively low in carbohydrates, which means little or no flour (maybe some oatmeal), but sweetener is okay (I have both bulk cyclamate and erythrotol). Dark chocolate is okay, as is cream or butter.
Any suggestions? Recipes?
[1] I'm going to try making low-carb meringues again, using half sugar and half erythrotol. Last time I did that, the meringues turned out rather gummy, but I don't know whether it was the substitution or the weather that caused that. And even though they were gummy, they made a nice mid-morning and mid-afternoon snack.
