It calls for a 12- to 18-hour rise/proof (and will tolerate up to 24 hours), so I think you'd be better off putting it together the night before if you want to bake it in time for dinner.

I just mixed up another batch of dough for a second try. This time I used the prescribed amount of water, and ended up with the "shaggy" dough that's described in the recipe.

I'll be curious to see how it rises. It should be ready to bake in time for dinner.
